A chicken Curry from Goa

That day we were bit bored of the usual recipes of Chicken and wanted to make something different.. and we ended up in trying to make a Chicken Curry with the taste from Goa.

It came out to be too tasty :) and afterward we made this preparation when we had guest at home and they liked it too.

You also try it out and let me know your experience.


Ingredients:

Chicken - 1/2 Kg.
Yoghurt - 1/2 a cup.
Ginger-Garlic - 1 tbsp.
Coriander Powder - 1 tbsp.
Cinnamon powder -1/2 tsp.
Clove Powder - 1/2 tsp.
Pepper Powder - 1 tsp.
Turmeric - 1/2 tsp.
Coconut milk 1/2 cup.
Red Chilli Powder - according to taste.
Salt - according to taste.
vegetable Oli.


Procedure:

  • Add yoghurt and turmeric powder to the chicken in a bowl and keep aside. It will get a bit marinated by the time you gather all the other ingredient and start cooking on stove.
  • On stove in a pan, add ginger-garlic paste to 2 spoon of oil, fry a while and then add coriander powder, cinnamon powder, clove powder, pepper powder,red chilli powder.
  • After a smell starts coming up from the cooked masala, add the coconut milk.
  • Add the marinated chicken and add salt accordingly.
  • Saute on medium heat till the liquid gets a sauce like texture.

If your chicken is tender, you can keep adding little water and keep sauteing till it get cooked, otherwise add 1/2 cup water and apply a tight lid to the pan and leave for some time, so that the chicken get cooked properly.

Banana Kofta


Green banana is a therapeutic vegetable for many of the problems we have accumulated in our body because of our irregular life style. It helps in absorption of more nutrient into our intestine, it helps cure stomach ulcer and can prevent colonic cancer. It's good diet for diabetics and for those who want to loose some fat.

The taste of green banana does not appeal to many of us. But if you prepare it the way I suggest below, I swear you are gonna love it.

Ingredients:

For the banana balls (kofta):
  1. Green Banana - 2
  2. Onion -1 (finely chopped)
  3. Ginger (finely chopped) - 1 tea spoon
  4. Green Chili (finely chopped) - according to taste
  5. Coriander Powder - 1 tea spoon
  6. Chili Powder - 1 tea spoon or less according to taste
  7. Fresh Coriander Leaves (optional)
  8. Salt - according to taste
  9. Cooking oil
For the sauce:

  1. Bay leaves
  2. Whole Garam Masala ( Cardamom, Cinnamon, Cloves )
  3. Chopped onion
  4. Ginger-Garlic Paste - 1 Tea spoon
  5. Chili Powder - 1/2 Tea spoon
  6. Turmeric Powder 1/4 Tea spoon
  7. Chopped Tomato / Tomato Puree - 3 to 6 Table spoon accordingly taste
  8. Cumin Powder - 1/2 Tea spoon
  9. Coriander Powder - 1/2 Tea spoon
  10. Resins (Optional)
  11. Cashew nuts (Optional)
  12. Cooking oil
Procedure:

Making the banana balls (kofta):
  1. Peel off the skin and boil the green banana either as whole or by cutting it into big chunks.
  2. Smash the boiled banana and add finely chopped onion, ginger, green chili,coriander powder,chili powder, salt.If you have fresh coriander, u can finely chop that and add to it. Mix all the ingredients thoroughly.
  3. Make required sized balls and deep fry it and keep aside.
Making the sauce:
  1. In a cooking pan, add 1 table spoon oil.
  2. Put Bay leaves and whole garam masala, leave for few seconds.
  3. Add chopped onion, then add ginger garlic paste, fry for 1 minute.
  4. Then add chili powder and turmeric powder, then add tomoto puree.
  5. After a while, add cumin and coriander powder to it and add salt.
  6. If u like you can add resins and cashew nuts at this point.
  7. Add water up to required density, allow it to shimmer for a while and then add the kofta (banana) balls and turn off the stove.

Serve hot with rice or roti, as per your choice.

Okra in Yoghurt

My first recipe (The forgotten recipe of my Grandma )




This is a taste of Orissa, my birth place, in the eastern part of India. My Grandma used to make it and she used to call it "Bhendi Thukthuka". I do not know the original recipe, what I remember is the taste, and I just tried to reinvent it. I talked to my younger sister, who gave me few a tips and then I added my own imaginations and prepared it. The good thing is, it tasted similar to the taste of my childhood "Bhendi Thukthuka", but the look and texture was different from the original. So, here we go.


Ingredients
:

  1. Okra (Bhindi) - 200 gram
  2. Yoghurt- 1/2 cup
  3. Garlic (grated / finely chopped)- 1 table spoon
  4. Curry leaves - 5 to 10 leaves
  5. mustard seeds - 1/2 tea spoon
  6. Fennel seed (Sounf)- 1/2 tea spoon
  7. Turmeric powder - 1/4 tea spoon
  8. oil of your choice - 1 table spoon
  9. chopped green chili according to taste
  10. salt according to taste

Preparation:



  1. Cut the Okra into the desired size, you can make it as small as you want or keep it longer as well, I have cut off the two ends and then have cut them from the middle.
  2. Heat the oil in a non stick cookware, and when the oil is hot add mustard seed and fennel seed. Allow them to splutter, and then add grated garlic, curry leaves, chopped green chili and saute it for a while till the garlic and the green chili start changing color.
  3. Add the cut pieces of Okra and add salt and turmeric powder and mix everything on the pan evenly.
  4. Keep the heat in medium and cook till the Okra get tender.
  5. Add yoghurt and cook till the liquid is gone.
Serve it hot with either Rice or Roti/ Naan.
